GF Sloppy Joe Pie

This gluten-free Sloppy Joe Pie is comfort food with a creative twist. Inspired by Shepherd’s Pie and Tamale Pie, this version uses Italian seasonings and a flour crust to hold everything together into one hearty, crowd-feeding dish.


Cindy made a large batch in a roasting pan from Gleaners to feed her senior community, but the recipe can easily be halved or quartered for smaller households. Like many Gleaners recipes, it’s flexible and built around using what you have on hand.






GF Sloppy Joe Pie 🥧


Ingredients

From Gleaners

• Aluminum roasting pan

• 2 tsp. canola oil

• 3 lb. ground beef

• 6 sweet peppers, chopped

• 1⁄4 c. cornstarch

• 4 eggs, beaten

• 2 c. lactose-free whole milk

• 1⁄2 c. margarine, melted

• 2 c. gluten-free 1-to-1 baking flour

• 3 c. shredded Parmesan cheese


From Buy Nothing

• 2 onions, chopped

• 1 Tbsp. dried oregano

• 2 tsp. onion powder

• 1 tsp. garlic powder

• 1 tsp. celery salt

• 1 tsp. salt


From a friend

• 24-oz. jar of pasta sauce

From the community garden

• 1 Tbsp. dried basil

Instructions

  1. Grease large aluminum roasting pan with oil and set aside.

  2. Preheat oven to 400°F.

  3. In a large skillet over medium heat, brown and break up the ground beef.

  4. Stir in chopped onions, peppers, cornstarch, oregano, basil, sugar, onion powder, garlic powder, celery salt, and salt and cook until onions are translucent (about 7 minutes).

  5. Stir in pasta sauce, bring boil, and then lower heat to simmer while preparing the batter.

  6. In a medium bowl, beat together eggs and milk, add margarine and beat together, and then add flour and beat until smooth. Set aside.

  7. Spread the meat mixture over the bottom of the roasting pan, pour batter evenly over the top of meat, and then sprinkle the Parmesan cheese over the top.

  8. Bake for 25 minutes.

  9. Let cool for 10 minutes before cutting and serving.


Serves 20

Optional: Serve with shredded Romaine lettuce and ranch dip dressing from Gleaners.
