We love when our members share creative, healthy, and simple recipes! This week’s feature is a breakfast favorite—Oat Bran Pancakes. They’re gluten-free, sugar-free, and easy to make with just a few ingredients. Add your favorite toppings to make them your own!



Oat Bran Pancakes 🥞✨


Ingredients

  • 2 large eggs

  • 2 Tbsp Greek yogurt

  • ½ cup gluten-free oat bran (Bob’s Red Mill)

  • Sprinkle of salt

  • Optional: cinnamon, vanilla extract, blueberries


Instructions

  1. In a bowl, whisk together the eggs and Greek yogurt until well mixed. Tip: Add cinnamon or vanilla extract for extra flavor.

  2. Stir in the oat bran to form a smooth batter. Fold in blueberries if desired.

  3. Heat a skillet on high with butter or coconut oil until foamy.

  4. Drop spoonfuls of batter onto the pan and cook until small bubbles form on top.

  5. Flip and cook for about 1 minute, until golden.

  6. Serve warm with your favorite toppings!


💡 Try topping these pancakes with fresh fruit, nut butter, or a drizzle of honey (if you don’t need sugar-free). They’re a wholesome way to start your morning and a great use of pantry staples.
