We love when our members share creative, healthy, and simple recipes! This week’s feature is a breakfast favorite—Oat Bran Pancakes. They’re gluten-free, sugar-free, and easy to make with just a few ingredients. Add your favorite toppings to make them your own!
Oat Bran Pancakes 🥞✨
Ingredients
2 large eggs
2 Tbsp Greek yogurt
½ cup gluten-free oat bran (Bob’s Red Mill)
Sprinkle of salt
Optional: cinnamon, vanilla extract, blueberries
Instructions
In a bowl, whisk together the eggs and Greek yogurt until well mixed. Tip: Add cinnamon or vanilla extract for extra flavor.
Stir in the oat bran to form a smooth batter. Fold in blueberries if desired.
Heat a skillet on high with butter or coconut oil until foamy.
Drop spoonfuls of batter onto the pan and cook until small bubbles form on top.
Flip and cook for about 1 minute, until golden.
Serve warm with your favorite toppings!
💡 Try topping these pancakes with fresh fruit, nut butter, or a drizzle of honey (if you don’t need sugar-free). They’re a wholesome way to start your morning and a great use of pantry staples.
