At Gleaners, we know that creativity in the kitchen goes a long way—especially when it comes to using up larger-sized items you might not finish right away. One of our members, Carol recently shared this clever idea for turning leftover potato salad into a cozy, comforting soup. It’s simple, tasty, and a great way to reduce waste while feeding your family!
Potato Salad Soup 🥔🥣
Ingredients:
1 cup Reser’s Gourmet Red Potato Salad (or any potato salad you have on hand)
1 cup milk
Salt & pepper to taste
Optional: cooked bacon (about 1 slice or ¼ cup bacon bits)
Optional: grated cheese of your choice
Instructions:
Combine potato salad and milk in a saucepan over low heat.
Stir gently and season with salt, pepper, or other spices to taste.
Heat slowly until warmed through (keep heat low to avoid scorching the milk).
Add bacon if desired, and top with shredded cheese.
Serve and enjoy!
